How to Make Tzatziki Sauce



Tzatziki Sauce


2 cups of Greek yogurt

1/2 of one large cucumber, not peeled

2 cloves of garlic, finely minced

1/4 tsp dried dill

1/2 teas salt

1 Tbsp red wine vinegar

1 teas lemon juice

2 Tbsp olive oil


Wash and dry cucumber.   Grate cucumber and place in a sieve or colander to allow the liquid to drain.  This step may be done hours in advance, or place the grated cucumber in cheesecloth and squeeze out the liquid.  While the cucumber is draining, mince the 2 cloves of garlic.  In a medium bowl combine the 2 cups of Greek Yogurt, 2 cloves of garlic, the dill and salt.  Add in the 1 tablespoon of red wine vinegar, the 1 teaspoon of lemon juice and 2 tablespoons of olive oil.  Stir to combine.  Next add in the drained cucumber, stir to combine.  Cover the bowl and place in the refrigerator overnight to meld the flavors.  Prior to serving, drizzle with olive oil.
