Horta—the Greek term for wild or edible greens often translates as "weeds"—and has been foraged and eaten in Greece for thousands of years.
Early civilizations in Greece foraged over 300 species of indigenous wild plants, such as dandelions and chicory, using them to supplement a basic diet of bread and olives. For centuries, people simply boiled these greens and dressed them with olive oil and lemon juice (that's the way we love to eat it too!).
During periods of extreme hardship foraging for roadside weeds became a vital lifeline against starvation.
Today, eating horta is a point of national pride rather than a sign of poverty.
